The Culinary Historians of Boston presents their February talk on Japanese foodworkers. Professor Merry White will share her study of the experience of food workers - domestic, industrial and artisanal - included observations and discussions of food work as high art and craft, as cultural script, as family engagement, and as environmental and nutritional work. Workers conveyed their senses of value, service, craftsmanship, artisanry, science and morality. Themes of bodywork, tools, and technique - and of regional distinction- in ingredients, dishes, technique and tools - were more dominant than any narrative of national culture. In stories of individuals we hear how food workers create value and meaning in their work, their products and in themselves.
